Career Growth Hospitality Recruitment are looking for a skilled, passionate and detail-driven Sous Chef to join a world-class fine dining kitchen within a prestigious luxury estate based in Stellenbosch.

This is an incredible opportunity to work alongside a talented Head Chef, delivering exceptional culinary experiences in a refined, high-end environment.

Key Responsibilities:
  • Support and lead the kitchen team in the absence of the Head Chef
  • Guide and mentor junior chefs in food preparation, cooking techniques, and plating
  • Oversee daily kitchen operations, ensuring consistency and excellence in every dish
  • Manage stock, ingredients, and ensure a strict FIFO system is maintained
  • Monitor food quality, freshness, presentation, and correct temperatures at all times
  • Ensure all kitchen stations are well-stocked and prepared for service
  • Assist with menu planning and development alongside the Head Chef
  • Train, assess, and develop kitchen staff on an ongoing basis
  • Manage food ordering, stock control, and minimise waste to meet budget targets
  • Maintain kitchen organisation, hygiene, and food safety standards
  • Oversee staff scheduling, rosters, and daily operational planning
  • Ensure the team is fully briefed on reservations, events, and menu requirements
Minimum Requirements:
  • Culinary Diploma or equivalent qualification
  • 4 years' experience in a senior chef role within a 4 or 5-star or fine dining environment
  • Strong leadership and team management skills
  • Passion for high-quality, detail-focused cuisine
  • Excellent organisational and time management abilities
  • Strong communication skills (written and verbal)
  • Basic computer skills (MS Word, Excel, Outlook)
  • Own transport with a valid driver's license
  • Ability to work flexible hospitality hours (including evenings, weekends, and public holidays)
  • Strong attention to detail and commitment to consistency
