Job Description
A unique opportunity has emerged for a SOUS CHEF to join the culinary leadership team for an upcoming restaurant opening in the heart of Cape Town. This establishment features an elevated Karoo-Modern culinary concept with a Japandi aesthetic, focusing on premium Karoo lamb and organic, farm-to-table vegetables.
The restaurant will offer an intimate dining environment with a seating capacity of approximately 30-40 guests. As the Sous Chef, you will play a pivotal role in supporting the Head Chef, ensuring consistency in execution, and maintaining the highest standards of kitchen operations.
Core Responsibilities- Kitchen Support: Assist the Head Chef in leading the kitchen team, ensuring smooth service and consistent quality.
- Execution & Standards: Oversee daily preparation, cooking, and plating to guarantee dishes meet the restaurant's creative and technical standards.
- Operational Oversight: Manage stock control, supplier coordination, and compliance with hygiene and food safety regulations.
- Menu Contribution: Provide input on seasonal specials and creative ideas that align with the Karoo-Modern and Japandi fusion concept.
- Team Development: Mentor junior chefs and kitchen staff, fostering discipline, growth, and pride in craftsmanship.
- Collaboration: Work closely with the Head Chef and Restaurant Manager to ensure harmony between kitchen output and guest experience.
- Experience: Proven background as a Sous Chef or Senior Chef de Partie in a fine-dining or concept-driven environment.
- Technical Skill: Strong foundation in cooking techniques, ingredient handling, and plating precision.
- Calm Authority: Ability to maintain composure and consistency under pressure, supporting the Head Chef's leadership.
- Ingredient Passion: Respect for premium proteins, seasonal vegetables, and sustainable sourcing.
- Flexibility: Comfortable managing prep schedules, supplier interactions, and adapting to evolving menu demands.
- Requirements: Foreign nationals will be considered provided they hold a valid South African work permit granting authority for this specific role.
