Job Description

Position: Senior Sushi Chef. The Senior Sushi Chef will oversee the preparation, cooking, and presentation of high-quality sushi dishes to guests, ensuring exceptional dining experiences.

Responsibilities
  • Create innovative and visually appealing sushi dishes that meet the expectations of our guests.
  • Develop and update the sushi menu in collaboration with the culinary team and management.
  • Train and mentor junior sushi chefs to ensure consistency and quality in sushi preparation.
  • Monitor and manage inventory of sushi ingredients and supplies to maintain freshness and quality.
  • Ensure compliance with food safety and sanitation standards in the sushi kitchen.
  • Collaborate with the front-of-house staff to provide excellent customer service and address any guest feedback or special requests.
  • Stay current on food trends and industry developments to continuously improve the sushi offerings.
  • Assist in the hiring and training of new sushi kitchen staff as needed.
  • Maintain a clean and organized work environment in the sushi kitchen.
  • Do preparations of dishes.
  • Run sushi bar.
  • Do stock control.
Key Skills
  • Proven experience as a Sushi Chef in a hospitality setting.
  • Extensive knowledge of sushi preparation techniques, including cutting, rolling, and plating.
  • Strong understanding of sushi ingredients and flavors, as well as the ability to create unique sushi recipes.
  • Excellent communication and leadership skills to effectively lead a team of sushi kitchen staff.
  • Ability to work under pressure in a fast-paced environment while maintaining high standards of quality.
  • Strong attention to detail and creativity in designing visually appealing sushi dishes.
  • Certification from a reputable culinary school or sushi training program is preferred.
  • Flexibility to work evenings, weekends, and holidays as needed in a hospitality setting.
  • Need to deal with ordering processes.
Inherent Requirements
  • Culinary Expertise: Extensive experience in Japanese cuisine, particularly in sushi preparation and presentation. Thorough knowledge of traditional and contemporary sushi techniques, ingredients, and flavors.
  • Leadership Skills: Ability to lead and mentor a team of sushi chefs, kitchen staff, and apprentices. Strong communication skills to effectively delegate tasks, provide feedback, and maintain high culinary standards.
  • Creativity and Innovation: Demonstrate creativity in developing new sushi dishes, flavor combinations, and menu ideas. Stay updated on industry trends and incorporate innovative techniques to enhance the dining experience.
  • Attention to Detail: Meticulous attention to detail when preparing sushi, ensuring precise cutting, rolling, and plating techniques. Maintain high presentation standards to create aesthetically pleasing and appetizing dishes.
  • Time Management: Excellent organizational skills to handle multiple orders simultaneously while maintaining efficiency and quality. Ability to work well under pressure and meet tight deadlines during peak dining hours.
  • Food Safety and Hygiene: Thorough understanding and strict adherence to food safety regulations and hygiene standards. Maintain a clean and sanitary work environment to prevent cross-contamination and ensure the safety of customers and staff.
  • Customer Service: Strong customer service orientation with the ability to interact professionally with guests, take special requests, and address any concerns or feedback promptly. Strive to exceed customer expectations and deliver exceptional dining experiences.
  • Physical Stamina: Ability to stand for long periods, lift heavy objects, and withstand high temperatures in a fast-paced kitchen environment. Maintain stamina and focus during busy shifts to consistently deliver high-quality sushi dishes.
