Job Description
A unique opportunity has emerged for HEAD CHEF to lead the culinary team for an upcoming restaurant opening in the heart of Cape Town. This establishment features an elevated Karoo-Modern culinary concept with a Japandi aesthetic, focusing on premium Karoo lamb and organic, farm-to-table vegetables.
The restaurant will offer an intimate dining environment with a seating capacity of approximately 30-40 guests. As the Culinary Leader, you will be responsible for shaping the kitchen's creative direction, ensuring every dish reflects refinement, seasonality, and harmony with the overall guest experience.
Core Responsibilities- Culinary Leadership: Direct and inspire the kitchen team to consistently deliver dishes of exceptional quality, precision, and creativity.
- Menu Development: Curate and refine menus that highlight Karoo-Modern fusion with Japandi influences, emphasizing premium local ingredients and sustainability.
- Operational Excellence: Oversee kitchen organization, hygiene, stock control, supplier relationships, and compliance with food safety standards.
- Guest Experience Alignment: Collaborate closely with the Restaurant Manager to ensure seamless integration between the kitchen and front-of-house service.
- Innovation & Standards: Maintain high culinary standards while introducing seasonal specials and creative plating that enhance the restaurant's identity.
- Team Development: Recruit, train, and mentor kitchen staff, fostering a culture of discipline, growth, and pride in craftsmanship.
- Experience: Proven background as a Head Chef or Senior Sous Chef in a fine-dining or concept-driven environment.
- Creative Vision: A chef with a passion for ingredient-led cooking, able to balance tradition with innovation.
- Calm Authority: Leads the kitchen with composure, ensuring consistency even during high-pressure service.
- Ingredient Passion: Deep respect for premium proteins, seasonal vegetables, and sustainable sourcing.
- Flexibility: Comfortable managing prep schedules, supplier negotiations, and evolving menu demands.
- Requirements: Foreign nationals will be considered provided they hold a valid South African work permit granting authority for this specific role.
- Start Date: Approximately July 2026
- Salary: Market-related
