An established and growing hospitality group is seeking creative and highly organized BAR MANAGERS to lead the beverage departments at their flagship locations in Bryanston and Parkhurst.

The Bar Manager is responsible for the full lifecycle of the bar department, from creative menu development to rigorous stock control. A primary focus of this role is elevating the cocktail offering; therefore, advanced mixology skills and a deep understanding of classic and contemporary cocktail techniques are essential.

• Mixology & Innovation: Design and implement seasonal cocktail menus that complement the group's Mediterranean and Steakhouse culinary themes.
• Operational Leadership: Manage the daily operations of the bar, ensuring speed of service and consistent drink quality during high-pressure shifts.
• Stock & Cost Control: Take full accountability for beverage stock takes, variance analysis, and maintaining targeted GP margins.
• Supplier Relations: Manage relationships with liquor and beverage suppliers, ensuring optimal stock levels and coordinating brand activations.
• Staff Training: Lead and mentor the bar team, conducting regular workshops on mixology, spirit knowledge, and upselling techniques.
• Compliance: Ensure the bar operates in full accordance with liquor licensing laws and health and safety regulations.

• Experience: A minimum of 3 - 5 years in a Bar Management role within a premium, high-volume restaurant or upscale cocktail bar.
• Technical Skill: Expert-level mixology skills with a passion for creative beverage development.
• Management Ability: Strong administrative skills, including proficiency in POS systems (e.g., GAAP, Micros) and inventory management software.
• Leadership: A hands on manager who leads by example and thrives in a fast paced environment.
