Sommelier - Luxury Safari Lodge - Sabi Sand

Role Overview

An exceptional opportunity for a qualified and passionate Sommelier to curate and deliver a bespoke, world class wine experience within a luxury safari environment. This role focuses on personalised wine service, cellar management, guest engagement, and maintaining the highest standards of wine presentation and stock control.

Key Responsibilities Wine Service & Guest Experience
  • Deliver a consistent and bespoke wine experience for all guests
  • Pair wines according to menus and individual guest preferences
  • Host wine tastings and curated wine experiences
  • Provide expert wine recommendations with confidence and finesse
  • Host repeat and VIP guests with ease and adaptability
  • Manage full cellar stock control and inventory systems
  • Oversee bulk wine facilities and replenishment processes
  • Physically transfer and distribute wine across lodge cellars
  • Maintain accurate stock tracking and reporting
Administration & Compliance
  • Handle wine sales, invoicing, stock control, and related administration
  • Ensure accurate documentation and reporting procedures
  • Maintain compliance with SOPs and operational standards
  • Liaise with finance and operational teams where required
Training & Team Development
  • Train and develop lodge staff on wine service standards
  • Support continuous learning and product knowledge across teams
  • Contribute to a culture of service excellence and confidence in wine presentation
Brand, Sustainability & Collaboration
  • Actively support conservation messaging and sustainability initiatives
  • Contribute to "greening" lodge operations where possible
  • Collaborate effectively with all departments to ensure seamless guest service
  • Support multi skilling and cross departmental collaboration
Requirements
  • Strong knowledge of international wines
  • Minimum 3 years' experience in luxury hospitality or guest facing service
  • Strong attention to detail and organisational ability
  • Sales, leadership, and guest engagement capability
